I have added other tax options but they do not appear in the dropdown list when creating new invoice.

If the custom tax does not appear in the drop down list for item line in invoice screen, launch the software again.
Add a sample item and then choose the tax rate for the item in the Item record screen. Now create new invoice and add this item. The tax options should appear.
